Here’s a nutritious and delicious recipe for Hemp Seed Pumpkin Power Balls:

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup hemp powder
  • 1/4 cup chia seeds
  • 1/4 cup flax seeds (ground or whole)
  • 1/4 cup almond butter (or any nut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips or cacao nibs
  • 1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and cloves)
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt

Instructions:

  1. Prepare Ingredients: Measure out all the ingredients and have them ready.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, hemp seeds, chia seeds, flax seeds, pumpkin pie spice, and a pinch of sea salt. Mix well.
  3. Add Wet Ingredients: Add the pumpkin puree, almond butter, honey or maple syrup, and vanilla extract to the dry ingredients. Mix until everything is well combined and forms a sticky dough.
  4. Add Chocolate Chips: Fold in the dark chocolate chips or cacao nibs.
  5. Form Balls: Using your hands, roll the mixture into small balls, about 1 inch in diameter. If the mixture is too sticky, you can refrigerate it for 10-15 minutes to make it easier to handle.
  6. Chill: Place the power balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  7. Store: Once the power balls are firm, transfer them to an airtight container. Store in the refrigerator for up to 1 week or in the freezer for up to 3 months.

Tips:

  • Customization: Feel free to customize the recipe by adding other ingredients like shredded coconut, dried fruits, or different types of seeds.
  • Consistency: If the mixture is too dry, add a bit more pumpkin puree or almond butter. If it’s too wet, add more oats or ground flax seeds.
