Hemp Protein Chocolate Chip Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup hemp protein powder
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, combine the whole wheat flour, hemp protein powder, almond flour, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey or maple syrup, eggs, vanilla extract, and almond milk.
  4. Combine and Add Mix-ins: Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dark chocolate chips.
  5. Bake: Divide the batter evenly among the muffin cups. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
