Gluten-Free Hemp Seed Bread
Ingredients:
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 cup almond flour
- 1/4 cup hemp seeds
- 1/4 cup flax seeds
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1 tablespoon chia seeds
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 teaspoon salt
- 1 tablespoon honey or maple syrup
- 1 1/4 cups warm water (110°F/45°C)
- 2 tablespoons olive oil
- 1 teaspoon apple cider vinegar
Instructions:
- Prepare the Yeast: In a small bowl, dissolve the honey or maple syrup in the warm water. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
- Mix Dry Ingredients: In a large mixing bowl, combine the gluten-free all-purpose flour, almond flour, hemp seeds, flax seeds, sunflower seeds, pumpkin seeds, chia seeds, and salt.
- Combine Wet and Dry Ingredients: Add the frothy yeast mixture, olive oil, and apple cider vinegar to the dry ingredients. Mix until a dough forms.
- First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
- Shape the Dough: Punch down the dough and shape it into a loaf. Place the loaf in a greased 9×5-inch loaf pan.
- Second Rise: Cover the loaf pan with a damp cloth and let it rise for another 30-45 minutes, or until it has doubled in size again.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Bake: Bake the bread for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
- Cool: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
