Hemp Breakfast Bread

Here’s a nutritious and delicious recipe for Hemp Breakfast Bread:

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup hemp seeds
  • 1/4 cup ground flax seeds
  • 1/4 cup coconut sugar or brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/2 cup chopped nuts (such as walnuts or pecans) (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, hemp seeds, ground flax seeds, coconut sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, beat the eggs and then add the applesauce, melted coconut oil, honey or maple syrup, vanilla extract, and almond milk. Mix until well combined.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in the chopped nuts and raisins or dried cranberries if using.
  5. Pour Batter into Pan: Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it with foil.
  7. Cool: Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
  8. Serve: Slice and serve the hemp breakfast bread on its own or with your favorite spread.

Tips:

  • Storage: Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. It can also be frozen for longer storage.
  • Variations: You can add other mix-ins like shredded coconut, chocolate chips, or chopped dried fruits for different flavors and textures.
