Hemp Protein Energy Bars

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup hemp protein powder
  • 1/4 cup hemp seeds
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup dark chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Mix Dry Ingredients: In a large bowl, combine the rolled oats, hemp protein powder, hemp seeds, dried cranberries or raisins, and chocolate chips if using.
  2. Mix Wet Ingredients: In another bowl, mix the almond butter, honey or maple syrup, vanilla extract, and salt until smooth.
  3. Combine and Press: Pour the wet ingredients into the dry ingredients and mix until well combined. Press the mixture into a lined 8×8-inch baking pan.
  4. Chill and Cut: Refrigerate for at least 2 hours until firm. Cut into bars and store in an airtight container.
