Hemp Protein Muffins
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/4 cup hemp protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup grated carrot or zucchini (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, combine the whole wheat flour, almond flour, hemp protein powder, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients: In another bowl, whisk together the eggs, applesauce, honey or maple syrup, coconut oil, and vanilla extract.
- Combine and Add Mix-ins: Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in grated carrot or zucchini and nuts or chocolate chips if using.
- Bake: Divide the batter evenly among the muffin cups. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
