Hemp Protein Pancakes
Ingredients:
- 1 cup whole wheat flour
- 1/4 cup hemp protein powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup almond milk (or any plant-based milk)
- 1 egg (or flax egg for vegan)
- 2 tablespoons coconut oil, melted
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
Instructions:
- Mix Dry Ingredients: In a large bowl, combine the whole wheat flour, hemp protein powder, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, whisk together the almond milk, egg, coconut oil, honey or maple syrup, and vanilla extract.
- Combine and Cook: Pour the wet ingredients into the dry ingredients and stir until just combined. Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter. Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve: Serve warm with your favorite toppings like fresh fruit, nuts, or additional syrup.
