Hemp Seed Pumpkin Power Balls
A quick snack perfect for a mid-day pick me up or pre workout boost, these Hemp Seed Pumpkin Energy Balls will be your fall favorite!
|1 Cup||Dates (heaping cup)|
|1/3 Cup||Pumpkin Puree|
|1/2 Cup||Pumpkin Seeds (chopped)|
|1/4 Cup||Hemp Seeds|
- In a blender or food processor add dates, honey & water. Process until dates are broken down, scraping sides as needed to get a paste-like consistency. (may take 3-5minutes)
- Add pumpkin puree to the date mixture and blend until smooth consistency is achieved, again scraping the side as needed.
- Transfer pumpkin date mixture to a mixing bowl. Add oats, pumpkin seeds & hemp seeds. Stirring to combine.
- Using a tablespoon scoop form quarter sized balls. Makes 18-20 balls.
- Store in airtight container in the fridge or freezer.
